Japanese matsutake mushrooms and fugu skin broth

Matsutake mushrooms are the most expensive mushrooms in Japan and fugu is the famous poisonous fish also called puffer fish served very often as a sashimi. Fugu was the speciality of the restaurant where I took this picture. Fugu was served there as sashimi, in salad, in soup, fried, deep fried, steamed, fugu organs were also served, and all this was wash down with the fugu skins infused sake!

Adana Kebab is a long, charcoal grilled, minced meat brochette mounted on a wide skewer.Ideally the meat is hand chopped but often you will find it machine ground in a single pass, mixed with fat in a proportion of one to five. Only salt and dried red pepper flakes (sweet or hot according to taste) are added to the meat. Red bell pepper can be hand chopped into very small pieces and be used instead of chili pepper. 4 or 5 ounces (100 or 150 grams) of meat are mounted on a special skewer which is about 3 feet (0.91 m) long (80-90 cm) and about an inch wide (2.0-2.5 cm). Then it is grilled over hot charcoal.

Ok, this obviously is not a "photography" shot :-) It's meant as inspiration for all of us who are getting tired of Winter - or if you (like me) are gearing up for some serious Alpine experience. What the picture is about? My favorite recipe for....: Glhwein! Ok, this is how I do it (recipe yields one serving, I usually make about 4 servings): About 4 teaspoons of brown sugar in a pan. Put it on high heat and let caramelize (melt it but don't burn it!!). Pour in the red wine (watch out - that will give a lot of steam - don't burn your fingers!). Add the peel of about 1/2 orange (or 1 mandarin), about 1/2 a stick of cinnamon and 1 or 2 cloves. Let this simmer for about 5 minutes on low heat. Add a good shot of Kirsch (cherry schnapps) - the more the merrier :-). Strain and serve - drink as hot as you dare!
