Cactus Jelly

Made from the fruits (also known as 'tunas' or pears) of the prickly pear cactus (Opuntia Englemanii Linguiformis) commonly called "Cow's Tongue" cactus. The fruits have to first be de-spined by singing over flame, then pealed and the seeds scooped out. Pulp is then boiled with with water, pectin, lemon juice and suger to create the jelly.

Designed by the builder of the home, Mike. Mike was an aeronautical engineer and a builder of yachts and also a chef. An incredible man. The timber in the kitchen came from one of Mike's old yachts; and no cupboard doors is just fantastic. When they put me in an old people's home, I am going to go and pull off all the cupboard doors!

Morel mushrooms washed, halved and cleaned

First I soak them in lukewarm, slightly salted water. This takes care of some of the little animals who like to visit the inside of the hollow stem. After this, I put the mushrooms in a plastic bag containing flour, a bit of salt and pepper and shake them well. They are then ready to be fried in butter or olive oil. Got the recipe from Joan! End result, 108 quarts. That may not sound like a lot, but the canners only hold 7 quarts and take almost two hours from beginning to end. I did have 4 of them going which was not the easiest to synchronize as two were in the basement and two upstairs. It still took all day. This will be enough for all of us for the winter. Probably didn't save much money, but we know where they come from. and the kids learned a lot of what it takes to store their own food. Priceless.
